I am kicking off this series on picnic food with my favorite salsa recipe. This salsa is easy and delicious and can be thrown together in less than ten minutes. I love having it on hand to use for nachos, salads, soup, quesadillas, and, of course, to grab along with some chips for a quick picnic food. I am forever indebted to my friend Betsy for being awesome and throwing a party with a Mexican buffet. This recipe is adapted from hers.
Yesterday my oldest son caught a frog for the first time. The five of us were on a walk through the woods and I spotted it hopping along. After I pointed it out to the boys, Jack immediately darted after it to scoop it up in his hands. He and his brother took a good look at it then released it back on the ground. During our walk, they were alternately pointing out mushrooms, ferns, rotting wood, and swinging sticks to defend themselves from coyotes, (the latter was mainly my two year old).
Times like these spent outside exploring with my family bring me so much joy. The peacefulness of the woods is wonderful, but even better is the pleasure I take in watching my children discover new things and recount what they have already learned. It is in these moments that I am confident that our slow and simple approach to learning is right for us right now.
Is it just me, or did the past 5 months fly by really quickly?
I am so excited about summer and all the fun in the sun we are going to have. Last week I shared our summer backyard bucket list, and there’s even more I’m hoping we will be able to do this summer. Just this month we have a birthday party, family visiting, trips to the local science museum, park playdates, and hopefully lots of trips to the farmers market.
This month is the perfect month for a series on picnic fare. We have a picnic, either at home or at local parks, at least three times a week during the summer. In fact, in just a little bit we are headed to a park to play and picnic by the lake for dinner. Healthy, delicious, and quick meals are on the menu! You can look for the first picnic recipe later this week.
